Step 1: Make the Green Goddess Aioli

In a blender or food processor, combine mayonnaise, parsley, basil, scallion, lemon juice, anchovies, and garlic. Blend until smooth. Chill in refrigerator for 20 minutes to let flavors meld.


Step 2: Steam and Chill the Lobster

Fill a saucepan with 2 inches of water and bring to a boil with a steamer basket on top. Steam lobster tails, flesh-side up, until shells turn red and meat is just firm (4–6 minutes). Transfer immediately to an ice bath for 5 minutes, then drain.


Step 3: Prepare for Serving

Carefully remove lobster meat from shells, slice into bite-sized pieces, then return them to the shells for elegant presentation. Serve with chilled green goddess aioli and lemon wedges.
