  • ½ cup mayonnaise

  • 2 tbsp fresh lemon juice

  • 1 tbsp chives, chopped

  • 1 tbsp tarragon, chopped

  • ½ tsp kosher salt

  • ¼ tsp black pepper

  • 6 slices thick-cut bacon, halved

  • 4 potato rolls, split

  • 4 butter lettuce leaves

  • 1 medium tomato, sliced ¼-inch thick

Step 1: Make the Lobster Salad

Cook bacon in a cast-iron skillet until crisp (12–15 minutes). Remove, then brush potato rolls with reserved bacon drippings and toast until golden.


Step 3: Assemble the BLTs

Layer lettuce, tomato, lobster salad, and bacon on each bottom bun. Top with the toasted roll and serve immediately.
